It is best to peel the prawns for
this dish as it help them to absorb maximum flavor. Serve with salad
as a starter or with rice and accompaniments for a more substantial
meal.
Ingredients
- king prawns - 15-20, cooked,
peeled
- garlic - 3 cloves, roughly
chopped
- fresh green chilies - 1, chopped
- crushed red chilies - 5ml/1 tsp
- mango chutney - 15ml/1
tbsp
- tomatoes - 3, chopped
- lemon juice - 5ml/1 tsp
- oil - 15ml/1 tbsp
- salt - 2.5/½ tsp
- fresh coriander sprigs - to
garnish
Method
- Heat the oil, add the garlic in
a medium heavy-based saucepan and cook gently for few minutes.
- Lower the heat and add the fresh
green chilies, crushed red chilies, tomatoes, mango chutney, lemon
juice, and salt into the saucepan.
- Finally add the prawns and turn
up the heat and stir-fry these quickly until heated through.
- Transfer the prawns to a plate
and serve garnished with fresh coriander sprigs. Serves 4.
