Glazed Garlic Prawns

It is best to peel the prawns for this dish as it help them to absorb maximum flavor. Serve with salad as a starter or with rice and accompaniments for a more substantial meal.

Ingredients

  • king prawns - 15-20, cooked, peeled
  • garlic - 3 cloves, roughly chopped
  • fresh green chilies - 1, chopped
  • crushed red chilies - 5ml/1 tsp
  • mango chutney -  15ml/1 tbsp
  • tomatoes - 3, chopped
  • lemon juice - 5ml/1 tsp
  • oil - 15ml/1 tbsp
  • salt - 2.5/½ tsp
  • fresh coriander sprigs - to garnish

Method

  • Heat the oil, add the garlic in a medium heavy-based saucepan and cook gently for few minutes.
  • Lower the heat and add the fresh green chilies, crushed red chilies, tomatoes, mango chutney, lemon juice, and salt into the saucepan.
  • Finally add the prawns and turn up the heat and stir-fry these quickly until heated through.
  • Transfer the prawns to a plate and serve garnished with fresh coriander sprigs. Serves 4.
