Balti Chicken Curry Recipe

Cook tender pieces of chicken with fresh vegetables and aromatic spices in the traditional Balti style.

Ingredients

  • Chicken breast (skinned) - 700 grams/1-1/2 lbs
  • Cooking oil - 1 tablespoon
  • Fennel seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Onion (thickly sliced) - 1 piece
  • Garlic (crush) - 2 cloves
  • Root ginger (finely chopped) - 1 inch
  • curry paste - 15ml/1 tablespoon
  • Broccoli (broken into florets) - 230 grams/8 oz
  • Tomatoes (cut into thick wedges) - 4 pieces
  • Garam masala - 5ml/2 tablespoon
  • Fresh coriander (chopped) -30ml/2 tablespoons
  • Naan  bread

Method

  • Cut chicken breast into bite size
  • Heat cooking in pan and add cumin, fennel seeds and fry unti seeds start to splutter.
  • Add ginger, onion, garlic and cook for 5 minutes.
  • Add curry paste and stir fry for 3 minutes.
  • Add broccoli florets then stir fry for 5 minutes.
  • Add chicken pieces, mix well and cook for 7 minutes.
  • Add tomato wedges with garam masala and fresh coriander.
  • Cook the curry for another 10 minutes until chicken pieces become tender.
  • Serves 4 with naan bread.
