Beef Madras

Ingredient

  • lean stewing beef - 900 gram
  • oil - 1 tablespoon
  • onion - 1 large, chopped
  • cloves - 4
  • green cardamom pods - 4
  • green chilies - 2 ,chopped
  • root ginger - 2.5cm, chopped
  • garlic - 2 cloves, crushed
  • dried red chilies - 2
  • curry paste - 1 tablespoon
  • ground coriander - 2 teaspoon
  • ground cumin - 1 teaspoon
  • salt - ½ teaspoon
  • beef stock - 2/3 cup
  • fresh coriander
  • rice

Method

  • Remove any visible fat from the beef and cut the meat into 2.5cm cubes.
  • Heat the oil in a large heavy-based frying pan and stir-fry the onion, cloves and cardamom pods for 5 minutes. Add the fresh green chilies, ginger, garlic and dried red chilies and fry for further 2 minutes.
  • Add the curry paste and fry for 2 minutes. Add the beef and fry for 5 - 8 minutes until all the meat pieces are lightly browned.
  • Add the coriander, cumin salt and stock. Cover and simmer gently for 1 - 1½ hours or until the meat is tender. Serve with rice and garnish with fresh coriander. Serve 4.
