Ingredient
- lean stewing beef - 900 gram
- oil - 1 tablespoon
- onion - 1 large, chopped
- cloves - 4
- green cardamom pods - 4
- green chilies - 2 ,chopped
- root ginger - 2.5cm, chopped
- garlic - 2 cloves, crushed
- dried red chilies - 2
- curry paste - 1 tablespoon
- ground coriander - 2 teaspoon
- ground cumin - 1 teaspoon
- salt - ½ teaspoon
- beef stock - 2/3 cup
- fresh coriander
- rice
Method
- Remove any visible fat from
the beef and cut the meat into 2.5cm cubes.
- Heat the oil in a large
heavy-based frying pan and stir-fry the onion, cloves and
cardamom pods for 5 minutes. Add the fresh green chilies,
ginger, garlic and dried red chilies and fry for further 2
minutes.
- Add the curry paste and fry
for 2 minutes. Add the beef and fry for 5 - 8 minutes until all
the meat pieces are lightly browned.
- Add the coriander, cumin salt
and stock. Cover and simmer gently for 1 - 1½ hours or until the
meat is tender. Serve with rice and garnish with fresh
coriander. Serve 4.
