Stir-fried Eggs With Pepper Mint Leaves Recipe

Ingredients

  • Pepper mint leaves - 75 grams

  • Onions (cut in rings) - 1 piece

  • Eggs - 4 pieces

  • Preserved duck eggs - 1 piece

Seasoning

  • Light soy sauce - ˝ teaspoon

  • Cooking wine - ˝ teaspoon

  • Cooking oil - 2 teaspoons

Method

  • Remove shell from preserved duck egg and diced.

  • Beat eggs, add seasoning and preserved duck eggs and combine well.

  • Heat 2 tablespoons of cooking oil, sauté onions to fragrant, add egg mixture in and simmer with low heat.

  • Stir egg constantly until almost cooked then add pepper mint leaves, mix well and dish up.
