Ingredients

Frozen geoduck - 400 grams

Sha shen - 19 grams

Yu zhu - 38 grams

Lean pork - 150 grams

Ginger - 2 slices
-
Spring onions (sectioned) - 1 stalk

Cooking wine - 1 tablespoon

Boiled water - 5 cups

Salt to taste

Method

Soak sha shen and
yu zhu for 5 minutes. Parboil lean pork for a while and
rinse.

Defrost geoduck, rub with salt and
rinse.

Bring ½ pot of water to boil, add
geoduck, ginger slices, spring onions and cooking wine, cook for
5 minutes and drain.

transfer geoduck into a steam pot,
add lean pork, sha shen, yu zhu and top with
boiled water. Cover and steam for 3½ hours. Add salt to taste
and serve.
