Steam Geoduck With herbs Recipe

Ingredients

  • Frozen geoduck - 400 grams

  • Sha shen - 19 grams

  • Yu zhu - 38 grams

  • Lean pork - 150 grams

  • Ginger - 2 slices

  • Spring onions (sectioned) - 1 stalk

  • Cooking wine - 1 tablespoon

  • Boiled water - 5 cups

  • Salt to taste

 

Method

  • Soak  sha shen and yu zhu for 5 minutes. Parboil lean pork for a while and rinse.

  • Defrost geoduck, rub with salt and rinse.

  • Bring ½ pot of water to boil, add geoduck, ginger slices, spring onions and cooking wine, cook for 5 minutes and drain.

  • transfer geoduck into a steam pot, add lean pork, sha shen, yu zhu and top with boiled water. Cover and steam for 3½ hours. Add salt to taste and serve.
