Pig's Trotter With Papaya Soup Recipe

Ingredients

  • Pig's fore trotter - 1 piece

  • Papaya (not too ripe) - 800 grams

  • Peanuts -100 grams

  • Red dates (seeds removed) - 4 pieces

  • Dried tangerine peel - ½ piece

  • Salt to taste

Method

  • Peel skin of papaya and remove seeds, cut into 4 pieces.

  • Soak peanuts with hot water for 15 minutes and remove skin.

  • Soak dried tangerine peel for 10 minutes and remove pith.

  • Clean pig's trotter, chop into pieces and parboil for 3 minutes. Rinse and set aside.

  • Boil 2000 ml of water with tangerine peel for 15 minutes, add pig's trotter, peanuts and red dates and bring to boil again.

  • Turn to medium heat and cook for 1 hour, add papaya and simmer for another 1 hour, add salt to taste and serve hot.
