Pig's Tongue Soup Recipe

Ingredients

  • Pig's tongue - 1 piece (about 500 grams)

  • Dried Chinese cabbage - 75 grams

  • Chinese white cabbage - 300 grams

  • Honey dates - 4 pieces

  • Dried tangerine peel -  ½ piece

  • Salt to taste

Method

  • Rinse and clean both vegetables well and cut into section. Soak dried cabbage for 20 minutes before use.

  • Soak dried tangerine peel until soften and remove pith.

  • Parboil pig's tongue for 5 minutes, remove the skin and rinse well.

  • Boil 1500 ml of water with dried tangerine peel then add dried cabbage, pig's tongue and honey date and cook with medium heat for 1 hour.

  • Add white cabbage into the soup and continue to cook for 1½ hour with low heat.

  • Dish out pig's tongue and let it cool then cut into slices and serve with light soy sauce.

  • Season soup with salt and serve hot.
