Rinse and clean both vegetables
well and cut into section. Soak dried cabbage for 20 minutes
before use.

Soak dried tangerine peel until
soften and remove pith.

Parboil pig's tongue for 5
minutes, remove the skin and rinse well.

Boil 1500 ml of water with dried
tangerine peel then add dried cabbage, pig's tongue and honey
date and cook with medium heat for 1 hour.

Add white cabbage into the soup
and continue to cook for 1½ hour with low heat.

Dish out pig's tongue and let it
cool then cut into slices and serve with light soy sauce.

Season soup with salt and serve
hot.
