Method

Wash and chop lamb into serving
size.

Bring suitable amount of water to
boil , add ginger, pepper, spring onion, cooking wine and mutton
and parboil for 5 minutes. Drain and rinse mutton then set
aside.

Bring 1500 ml of water to boil in
a clean pot, add mutton, huai shan, wolfberry, dried
longan and let it cook for 10 minutes with medium heat.

Turn to low heat and continue to
simmer for 2½ hours, add salt to taste and serve hot.
