Mutton Soup With Chinese Herbs

Ingredients

  • Mutton - 450 grams

  • Huai shan - 35 grams

  • Wolfberry (Qi zi) - 12 grams

  • Dried longan - 10 pieces

  • Ginger - 3 slices

  • Spring onion - 2 stalks

  • Cooking wine - 2 teaspoons

  • White pepper - 10 cloves

  • Salt to taste

Method

  • Wash and chop lamb into serving size.

  • Bring suitable amount of water to boil , add ginger, pepper, spring onion, cooking wine and mutton and parboil for 5 minutes. Drain and rinse mutton then set aside.

  • Bring 1500 ml of water to boil in a clean pot, add mutton, huai shan, wolfberry, dried longan and let it cook for 10 minutes with medium heat.

  • Turn to low heat and continue to simmer for 2½ hours, add salt to taste and serve hot.
