Method

Soak lotus seeds, barley and dried
tangerine peel for 15 minutes. Remove pith from tangerine peel.

Remove skin and innards from
frogs, parboil for 1 minutes then drain.

Bring 2000 ml of water and dried
tangerine peel to boil, then add in all other ingredients
and boil for another 10 minutes.

Turn to low heat and continue to
simmer for 2 hours. Add salt to taste and serve hot.
