Frog Soup With Lotus Seeds Recipe

Ingredients

  • Frog - 600 grams

  • Lotus seeds - 75 grams

  • Barley - 35 grams

  • Dried tangerine peel - ¼ piece

  • Salt to taste

Method

  • Soak lotus seeds, barley and dried tangerine peel for 15 minutes. Remove pith from tangerine peel.

  • Remove skin and innards from frogs, parboil for 1 minutes then drain.

  • Bring 2000 ml of water and dried tangerine peel to boil, then add  in all other ingredients and boil for another 10 minutes.

  • Turn to low heat and continue to simmer for 2 hours. Add salt to taste and serve hot.
