Braised Duck webs With Abalone Recipe

Ingredients

  • Duck Webs - 12 pieces

  • Abalone - 1 can

  • Mustard green (use only stems) -400 grams

  • Cooking wine - 2 teaspoons

Ingredients for duck webs

  • Peppercorn - ½ teaspoon

  • Star anise - 2 pieces

  • Cumin - 1 teaspoon

  • Dried tangerine peel - ¼ pieces

  • Water - 3 cups

Seasoning

  • Light soy sauce - 2 tablespoons

  • Dark soy sauce - 3 tablespoons

  • Cooking wine - 2 tablespoons

  • Sugar - 2 tablespoons

Gravy ingredients

  • Abalone sauce - 3 tablespoons

  • Oyster sauce - 1 tablespoon

  • Dark soy sauce - ½ teaspoon

  • Sugar - ½ teaspoon

  • Cornstarch solution - 3 tablespoons

  • Sesame oil - few drops

Method

  • Cut abalone into slices and keep the sauce. Parboil duck webs for a while, drain and rinse.

  • Cook ingredients for duck webs until sauce reduced to 2 cups, strain and add seasoning and duck webs, simmer with low heat for 10 minutes or until duck webs are tender. Cover and leave it to cool, drain and set aside duck webs.

  • Heat up 2 tablespoons of cooking oil in sauce pan, sizzle with cooking wine, add gravy ingredients and bring to boil.

  • Add duck webs and abalone, mix well and dish up.

  • Boil mustard green stems in stock or water until cook. Arrange on the side of the dish and serve.
