Black-Skinned Chicken Soup Recipe

     Ingredients

  • Black-skinned chicken - 1 bird

  • Bamboo fungus or bamboo pith (zhu sheng) - 10 grams

  • Lean pork - 120 grams

  • Red date (seed removed) - 4 pieces

  • Ginger - 2 slices

  • Boiled water - 4 cups

  • Salt to taste

 

Method

  • Soak bamboo fungus until soft and rinse well then cut into 2 inches strips.

  • Clean chicken, parboil lean pork and rinse well.

  • Put chicken, lean pork, ginger and red dates in a steam pot. Add 4 cups of boiled water and steam for 2½ hours.

  • Add bamboo fungus and continue to steam for another ½ hour.

  • Add salt to taste and serve hot.
