Ingredients

Black-skinned chicken - 1 bird

Bamboo fungus or bamboo pith (zhu
sheng) - 10 grams

Lean pork - 120 grams

Red date (seed removed) - 4 pieces

Ginger - 2 slices

Boiled water - 4 cups

Salt to taste

Method

Soak bamboo fungus until soft and
rinse well then cut into 2 inches strips.

Clean chicken, parboil lean pork
and rinse well.

Put chicken, lean pork, ginger and
red dates in a steam pot. Add 4 cups of boiled water and steam
for 2½ hours.

Add bamboo fungus and continue to
steam for another ½ hour.

Add salt to taste and serve hot.
