Stir-fried Prawns with Chinese Celery Recipe

Ingredients

  • Prawns (medium size) - 300 grams

  • Chinese celery (stalk only, sectioned) - 150 grams

  • Kelp (shredded) - 35 grams

  • Ginger - 1 slice

  • Cooking wine - 1 teaspoon

  • Stock - 1 cup

  • Water - 1 cup

  • Light soy sauce - 1 teaspoon

  • Cornstarch solution - 2 tablespoons

  • Salt and sugar to taste

  • Sesame oil - few drops

Marinade

  • Egg white - 1

  • Cooked oil - 1 tablespoon

  • Sesame oil - few drops

  • Cornstarch - ¼ teaspoon

  • Salt and pepper to taste

Method

  • Remove shell and rub salt on prawns then rinse. Pat dry and marinate for 15 minutes then deep-fried in warm oil and set aside.

  • Soak and clean shredded kelp, cook in boiling water and stock until tender.

  • Heat up 2 tablespoons of cooking oil in a wok and sauté ginger to fragrant then add prawns and sizzle with cooking wine.

  • Add kelp, Chinese celery and all seasoning, mix well and serve.
