Ingredients

Prawns (medium size) - 300 grams

Chinese celery (stalk only, sectioned)
- 150 grams

Kelp (shredded) - 35 grams

Ginger - 1 slice

Cooking wine - 1 teaspoon

Stock - 1 cup

Water - 1 cup

Light soy sauce - 1 teaspoon

Cornstarch solution - 2 tablespoons

Salt and sugar to taste

Sesame oil - few drops
Marinade
Method

Remove shell and rub salt on
prawns then rinse. Pat dry and marinate for 15 minutes then
deep-fried in warm oil and set aside.

Soak and clean shredded kelp, cook
in boiling water and stock until tender.

Heat up 2 tablespoons of cooking
oil in a wok and sauté ginger to fragrant then add prawns and
sizzle with cooking wine.

Add kelp, Chinese celery and all
seasoning, mix well and serve.
