Yam Abacus Recipe (Xuan Pan Tze)

 

      Ingredients
  • Yam - 500 grams
  • Tapioca Flour - 250 grams
  • Fish sauce - 1 tablespoon
  • Water - 100 ml
  • Cooking oil - 3 tablespoons
  • Salt and pepper to taste
  • Garlic (chopped) - 1 tablespoon
  • Small onions (sliced) - 3 pieces

      Ingredients B

  • Firm bean curd (shredded) - 1 piece
  • Lean pork (shredded) - 150 grams
  • Dried prawns - 50 grams
  • Dried mushrooms (soaked and shredded) - 4 pieces
  • Dried cuttlefish (shredded) - 50 grams
  • Black Cloud Years (soaked and shredded) - 10 pieces

      Method

  • Clean and remove skin from yam, cut into pieces and steam until soft.
  • Mix tapioca flour with little bit of oil and water and knead into a smooth dough. Divide dough into small portions and form into abacus shape.
  • Drop yam abacus into boiling water until it float up then drain and set aside.
  • Heat 2 tablespoons of cooking oil and stir fry garlic and small onions until fragrant.
  • Add in all ingredients B with fish sauce, pepper, salt and water and bring to boil. Stir well and simmer for 2 minutes, add yam abacus and toss to mix well. serve hot.
