Hakka Stew Pork (Hakka Zha Rou)

Ingredients

  • Pork (belly part) - 1.5 kilograms
  • Black cloud ears - 50 grams
  • Cooking oil for deep frying
  • Water - 1 liter

Marinades

  • Fermented red bean curds - 2 cubes
  • Light soy sauce - ½ teaspoon
  • Ginger juice - 2 tablespoons
  • Shallot juice - 1 tablespoon
  • Garlic juice - 1 tablespoon
  • Five spices powder - 1 teaspoon
  • Sesame oil - 2 teaspoons
  • Egg - 1 piece
  • cornstarch - 3 tablespoons
  • Salt and sugar to taste

Method

  • Clean pork and marinate with marinades for more than 1 hour. Keep marinades for later use.
  • Soak black cloud ear in warm water  and drain.
  • Heat cooking and deep fry marinated pork belly until golden brown and skin crispy.
  • Add fried pork, marinades and black cloud ears into 1 liter of water and bring to boil. Stew with low heat for about 1 hour until pork are tender. Taste and serve.
