Ingredients
- pork (belly part) - 600g
- sweet and salted Moy Choy -
150g each, soaked and diced
- garlic juice - ½ tsp
- ginger juice - 1 tsp
- salt - 1 tsp
- shallot juice - 1 tsp
- red dates - 10
- water - 2 liters
- cinnamon stick - 5cm
- lemon grass - 2 stalks
- cloves - 2
- star anise - 1

Method
- Cook the sweet and salted Moy
Choy with water for 40 minutes. You can add some cornstarch to
thicken it, mix well and set aside.
- Marinate the pork with
garlic juice, ginger juice, salt and shallot juice for an hour.
Roll up the meat into a cylinder shape and tie with a string.
- Boil the water together with
cinnamon, lemon grass, cloves, star anise, and red dates. Add in
the pork and cook over a low heat for an hour.
- Remove and leave the pork to
cool, then chill in the fridge. The meat can be served cold or
hot.
- Slice the cooked pork and
serve together with the Moy Choy on a dish.
