Ingredients
- pig's trotter (front leg) - 1,
cut into pieces
- eggs - 5, hard-boiled and
removed shell
- old ginger - 600g, cleaned,
crushed and cut in chunks
- water - 800ml
- black vinegar - 400ml
- sesame oil - 3 tbsp
- brown sugar - 4 tbsp

Method
- Heat the wok and put the pig's
trotter. Add a little salt and stir well.
- Cover with a lid and cook the
trotter dry and fragrant, then set aside.
- Next soaked the ginger in
water for 10 minutes, then dish out and drain.
- Heat the pan, and add the
sesame oil to stir-fry the ginger.
- Add the black vinegar, brown
sugar and water then bring to boil. Turn the heat low and simmer
for an hour.
- Finally, add in the egg,
trotter and continue to cook until the trotter is tender.
