Hakka Fried Noodle Recipe

Ingredients

  • Dried noodle (Prefer hand made) - 500 grams
  • Chives (cut into 2 inches length) - 200 grams
  • Bean sprout - 300 grams
  • Firm bean curd (shredded and fried) - 1 block
  • Dried prawns - (soaked) - 150 grams
  • Garlic (chopped) - 1 tablespoon
  • Egg  (beaten, pan fried and shredded) - 1 piece
  • Salt and pepper to taste
  • Water - 100ml

Method

  • Blanch noodle in boiling water until 80% cooked. Dish up and rinse with cold water, drain well then set aside.
  • Heat some oil in pan, fry shredded bean curd to lightly brown and set aside.
  • Add dried prawns into pan and stir fry until aromatic then add garlic and sauté until fragrant. Add chives, fried bean curd, bean sprout, salt and pepper and stir well.
  • Add water and bring to boil, add noodle and stir fry until dish slight dry up.
  • Spread shredded egg on top of noodle and serve.
