To clean the pork intestine
thoroughly, run a clove of garlic through the opening of one end
of the intestine to the other end. Use running water to flush
all impurity inside the intestine then marinate with salt in and
out for 10 minutes and rinse.

Cook intestine in boiling water
for 40 minutes, dish out and soak in cold water then cut into
1-inch sections.

Cut pork shoulder into thin
slices, marinate with soy sauce for 15 minutes then mix well
with corn starch and ½ tsp of cooking oil.

Cut pork liver into thin slices
then marinate with shredded ginger and 1 tsp of cooking
oil.

Boil red yeast rice in 2 bowls of
water for 5 minutes, add intestines and let it boil for another
5 minutes then add in the pork slices and off the heat.

Re-boil after 5 minutes, gently
add in the pork liver then off the heat. Cover for 2 minutes
then add pepper and salt to flavor.

Serve hot with rice or noodles.
