Glutinous Rice Balls In Soup

 

     Ingredients
  • Small dried fish (ikan billis) - 200 grams
  • Chicken carcass - 3 sets
  • Spare ribs - 300 grams
  • Garlic - 2 cloves
  • Dried prawns - 100 grams
  • Dried cuttlefish - 70 grams
  • Pepper and salt to taste
  • Glutinous rice flour - 500 grams
  • Water -350 ml (for rice balls)
  • Water - 1.5 liters (for soup)
  • Chicken meat (shredded) - 300 grams
  • Lean pork (shredded) - 300 grams
  • Chinese celery (shredded) -300 grams

      Method

  • To prepare soup - pan fry small dried fish and dried prawns with little bit of oil to fragrant. Add 1.5 liters of water and bring to boil then add chicken carcass, dried cuttlefish, spare ribs and garlic and simmer with low heat for 1 hour. Add salt and pepper to taste.
  • To prepare glutinous rice balls - Mix glutinous rice and water and make into dough. Shape rice dough into small round balls and cook in boiling soup until float up.
  • Add shredded pork, chicken and Chinese celery into soup and boil for 2 minutes. Serve hot.
