Hakka Black Bean Cake Recipe

This is a Hakka traditional dish that seldom serve nowadays. This is a sweet dish specially serve by the Tai Pu Hakka during Chinese New Year.

     

     Ingredients

  • Glutinous rice (wash and drained) - 1 kilograms
  • Black Beans (soaked) - 1 kilograms
  • Pig trotter - 1 kilograms
  • Pig thigh meat - 500 grams
  • Dried mandarin oranges (shredded) - 3 pieces
  • Sugar - 1.2 kilograms
  • Water - 1800 ml

 

      Method

  • Stir fry black glutinous rice without oil  until golden brown, leave it to cool and grind into flour.
  • Boil sufficient water and sugar together until sugar dissolved.
  • Put water, trotter, pork meat and black beans into a stock pot and cook with low heat until ingredients are soft. Remove bone from the trotter.
  • Add sugar solution into stock pot, stir and cook until thicken then add shredded mandarin orange, glutinous rice flour and mix well.
  • Continue to stir the mixture until sticky, smooth and firm.
  • Dish out and serve.
