
This is a Hakka traditional dish
that seldom serve nowadays. This is a sweet dish specially serve by
the Tai Pu Hakka during Chinese New Year. |
Ingredients
- Glutinous rice (wash and
drained) - 1 kilograms
- Black Beans (soaked) - 1
kilograms
- Pig trotter - 1 kilograms
- Pig thigh meat - 500 grams
- Dried mandarin oranges
(shredded) - 3 pieces
- Sugar - 1.2 kilograms
- Water - 1800 ml

Method
- Stir fry black glutinous rice
without oil until golden brown, leave it to cool and grind
into flour.
- Boil sufficient water and
sugar together until sugar dissolved.
- Put water, trotter, pork meat
and black beans into a stock pot and cook with low heat until
ingredients are soft. Remove bone from the trotter.
- Add sugar solution into stock
pot, stir and cook until thicken then add shredded mandarin
orange, glutinous rice flour and mix well.
- Continue to stir the mixture
until sticky, smooth and firm.
- Dish out and serve.
