This simple dish is a great
favorite in many Arab countries, particularly Egypt, the Lebanon and
Syria.
Ingredients
- cod or haddock fillets - 6
- tahini paste - 250ml/8fl oz/1
cup
- garlic - 1 clove, crushed
- large onions - 2, chopped
- lemon juice - 2 lemon
- black pepper and salt
- water - 45-60ml/3-4 cups
- olive oil - 60ml/4 tbsp
- salad and rice - to serve
Method
- Preheat the oven to
180˚C/350˚F/Gas 4. Arrange the fish fillets in shallow ovenproof
dish, then pour over 15ml/1 tbsp each of the olive oil and lemon
juice then bake it for 20 minutes.
- Meanwhile, heat the remaining
oil in a large frying pan and fry the onions 6-8 minutes until
almost crisp and well browned.
- Put the garlic, tahini paste and
seasoning in a small bowl and slowly beat in the water, remaining
lemon juice, a little at a time until the sauce is light and
creamy.
- Sprinkle the onions over the
fish then pour over the tahini sauce and bake for another 15
minutes until the fish is cooked through and the sauce in
bubbling.
- Serve the fish at once with
salad and rice. Serves 6.
