Prawns are popular everywhere in
the Middle East. This delicious recipe is an easy way of making the
most of them.
Ingredients
- Mediterranean prawns - 450g/1
lb, peeled
- tomatoes - 5-6, peeled and
chopped
- ground cumin - ½ tsp
- tomato puree - 30ml/2 tbsp
- ground cinnamon - ½ tsp
- garlic - 2-3 cloves, crushed
- onions - 2, chopped
- fish stocks - 120ml/4fl oz/½ cup
- oil - 30ml/3 tbsp
- black pepper and salt
- lemon juice - 1 lemon
- fresh parsley
- rice - to serve
Method
- Heat the oil and fry the onions
for 3-4 minutes. Add the garlic and fry for 1 minutes, then stir
in the tomatoes.
- Blend the tomato puree with fish
stock in pan with cinnamon, cumin and seasoning. Cover, and simmer
over a low heat for 15 minutes and stirring occasionally.
- Add the lemon juice and prawns,
then simmer the sauce for another 10-15 minutes over low heat
until the prawn is cooked.
- Serve with plain rice and
garnish with fresh parsley. Serves 4.
