Prawns in Tomato Recipe

Prawns are popular everywhere in the Middle East. This delicious recipe is an easy way of making the most of them.

Ingredients

  • Mediterranean prawns - 450g/1 lb, peeled
  • tomatoes - 5-6, peeled and chopped
  • ground cumin - ½ tsp
  • tomato puree - 30ml/2 tbsp
  • ground cinnamon - ½ tsp
  • garlic - 2-3 cloves, crushed
  • onions - 2, chopped
  • fish stocks - 120ml/4fl oz/½ cup
  • oil - 30ml/3 tbsp
  • black pepper and salt
  • lemon juice - 1 lemon
  • fresh parsley
  • rice - to serve

Method

  • Heat the oil and fry the onions for 3-4 minutes. Add the garlic and fry for 1 minutes, then stir in the tomatoes.
  • Blend the tomato puree with fish stock in pan with cinnamon, cumin and seasoning. Cover, and simmer over a low heat for 15 minutes and stirring occasionally.
  • Add the lemon juice and prawns, then simmer the sauce for another 10-15 minutes over low heat until the prawn is cooked.
  • Serve with plain rice and garnish with fresh parsley. Serves 4.
