This popular Middle Eastern
dip is widely available in supermarkets, but nothing compares with
the delicious home-made variety.
Ingredients
- chick-peas - 175g/6 oz/1 cup,
cooked
- tahini paste - 120ml/4fl/½ cup
- garlic - 3 cloves
- lemon juice - 2 lemon
- water - 45-60ml/3-4 tbsp
- black pepper and salt
- fresh radishes - to serve
For the garnish
- olive oil - 15ml/1 tbsp
- fresh parsley - 15ml/1 tbsp,
finely chopped
- paprika - 2.5ml/½ tsp
- black olive - 4
Method
- Place the chick-peas, tahini
paste, garlic, lemon juice, seasoning and a little of water in a
blender or food processor. Process until smooth adding a little
more water, if necessary.
- Alternatively if you don't have
a blender or food processor, mix the ingredients together in a
small bowl until smooth in consistency.
- Spoon the mixture into a shallow
dish. Make a dent in the middle and pour the olive oil into it.
- Garnish with parsley, paprika
and olives and serve with radishes. Serves 4-6.
