Houmus Recipe

This popular Middle Eastern dip is widely available in supermarkets, but nothing compares with the delicious home-made variety.

Ingredients

  • chick-peas - 175g/6 oz/1 cup, cooked
  • tahini paste - 120ml/4fl/½ cup
  • garlic - 3 cloves
  • lemon juice - 2 lemon
  • water - 45-60ml/3-4 tbsp
  • black pepper and salt
  • fresh radishes - to serve

For the garnish

  • olive oil - 15ml/1 tbsp
  • fresh parsley - 15ml/1 tbsp, finely chopped
  • paprika - 2.5ml/½ tsp
  • black olive - 4

Method

  • Place the chick-peas, tahini paste, garlic, lemon juice, seasoning and a little of water in a blender or food processor. Process until smooth adding a little more water, if necessary.
  • Alternatively if you don't have a blender or food processor, mix the ingredients together in a small bowl until smooth in consistency.
  • Spoon the mixture into a shallow dish. Make a dent in the middle and pour the olive oil into it.
  • Garnish with parsley, paprika and olives and serve with radishes. Serves 4-6.
