Baked Poussins Recipe

This dish is ideal for dinner parties. It is very easy to make and very tasty too. Allow ample time to make this recipe, however. The poussins should be allowed to marinate to make them extra delicious.

Ingredients

  • olive oil - 60ml/4 tbsp
  • onion - 1, large, grated
  • garlic - 2 cloves, crushed
  • paprika - 2.5ml/½ tsp
  • yogurt - 475ml/16fl oz/2 cups
  • lemon juice - 1 lemon
  • poussins - 4, halved
  • saffron stand - 2-3, soaked in 15ml/1 tbsp boiling water
  • black pepper and salt
  • cos lettuce salad - to serve

Method

  • Blend together the yogurt, olive oil, paprika, lemon juice, garlic, saffron stand, and onion, and season with pepper and salt.
  • Place the poussins halves in a shallow dish, pour over the marinate. Then cover and allow to marinate overnight in a cool place or for at least 4 hour in the fridge.
  • Preheat the oven to 180˚C/350˚F/Gas 4. Arrange the poussins in a greased ovenproof dish and bake in the oven for 30-45 minutes, basting frequently until cooked. Serve with cos lettuce salad. Serves 4.
