Falafel Recipe

These tasty deep fried patties are one of the national dishes of Egypt. They make an excellent starter or else can be served as a buffet dish.

Ingredient

  • dried white beans - 450 gram
  • red onion - 2 (chopped)
  • garlic - 2 large cloves (crushed)
  • parsley - 3 tablespoon, finely chopped
  • ground coriander - 1 teaspoon
  • ground cumin - 1 teaspoon
  • baking powder - 1½ teaspoon
  • oil
  • salt, ground black pepper, tomato salad

Method

  • Soak the white beans overnight in water.
  • Remove the skins and process in a blander or food processor. Add the chopped onion, garlic, parsley, coriander, cumin baking powder and seasoning and blend again to make a very smooth paste.
  • Allow the mixture it stand at room temperature for at least 30 minutes.
  • Take walnut-sized pieces of mixture and flatten into small patties. Set aside again for about 15 minutes.
  • Heat the oil until it's very hot and then fry the patties in batches until golden brown. Drain on kitchen paper and then serve with a tomato salad. Serve 6.
