In Turkey, little stuffed pasties
are very popular. They are easy to make and are ideal for starters,
parties or finger canapés.
Ingredients
- feta cheese - 225g/8 oz, grated
- mozzarella - 225ml/8 oz, grated
- eggs - 2 beaten
- fresh parsley - 45ml/3 tbsp,
chopped
- fresh chives - 45ml/3 tbsp,
snipped
- fresh mint - 45ml/3 tbsp,
chopped
- pinch of nutmeg
- filo pastry - 225g/ 8 oz
- melted butter - 45-60ml/3-4 tbsp
- freshly ground black pepper
Method
- Preheat the oven to 180˚C/350˚F/
Gas 4. In a bowl, blend the feta and mozzarella cheese with the
beaten eggs.
- Add the chopped herbs, season
with black pepper and nutmeg, and stir well to mix.
- Cut the sheets of pastry into
four rectangular strips approximately 7.5cm/3 in wide. Cover all
but one or two strips of the pastry with a damp cloth to prevent
them from drying out.
- Brush one strips of pastry at a
time with a little melted butter.
- Place 5ml/1 tsp of filling at
the bottom edge. Fold one corner over the filling to make a
triangle shape. Continue folding the pastry over itself until you
get to the end of the strip. Keep making triangle until all the
mixture is used up.
- Place the böreks on a
greased baking tray and bake in the oven for about 30 minutes
until golden brown and crisp. Serve warm or cold. Serves 35-40.
