Vegetarian Lamb curry Recipe

      Ingredients

  • Vegetarian lamb - 400 grams

  • Meat curry powder - 40 grams

  • Ginger (shredded) - 1 inch

  • Coconut milk - 140 ml

  • Water - 130 ml

  • Onion (chopped) -1 piece

  • Cooking oil - 3 tablespoons

  • Curry leaves - few pieces

  • Star anise -1 piece

  • Salt to taste

      Method

  • Mix 40 ml of coconut milk and 30 ml of water with curry powder into paste.

  • Heat cooking oil in sauce pan, add in ginger, chopped onions. star anise and curry leaves and stir-fry for about 2 minutes until fragrant.

  • Add in curry powder paste and fry for 1 minute then add remaining water and vegetarian lamb and bring to boil.

  • Turn to low heat and simmer for another 5 minutes then add the balance coconut milk and continue to simmer until gravy thickens.

  • Season with salt and serve hot with rice.

     *Vegetarian lamb is available in supermarkets and wet markets.
