Ingredients

Vegetarian lamb - 400

Meat curry powder - 40

Ginger (shredded) - 1

Coconut milk - 140 ml

Water - 130 ml

Onion (chopped) -1

Curry leaves - few

Star anise -1 piece

Method

Mix 40 ml of coconut milk and 30
ml of water with curry powder into paste.

Heat cooking oil in sauce pan, add
in ginger, chopped onions. star anise and curry leaves and
stir-fry for about 2 minutes until fragrant.

Add in curry powder paste and fry
for 1 minute then add remaining water and vegetarian lamb and
bring to boil.

Turn to low heat and simmer for
another 5 minutes then add the balance coconut milk and continue
to simmer until gravy thickens.

Season with salt and serve hot
with rice.
