Vegetarian 'Crab Meat' Roll Recipe

      Ingredients

  • Rice Flour - 2 tablespoons

  • Yam - 400 grams (peeled and diced)

  • Carrot - 3 tablespoons (chopped finely)

  • Mushrooms - 3 pieces (soaked and chopped finely)

  • Spring onion - 1 stalk (chopped finely)

  • Chili - 1 piece (chopped finely)

  • Coriander - 1 stalk (chopped Finely)

  • Bean curd sheet - 1 piece

  • Cornstarch mixture - 1 tablespoon

  • Cooking oil - for deep frying

  • Sugar, pepper and salt to taste

      Method

  • Steamed diced yam until soft and mash into paste when hot. Add rice flour, all chopped ingredients, sugar, pepper and salt  and mix well.

  • Divide mixture into two equal portion. Cut bean curd sheet into half then spread mixture onto each bean curd sheet and roll lengthwise into sausage shape. Seal the roll with little bit of cornstarch solution

  • Keep rolls in the fridge to harden a bit then cut each roll into 8 pieces. Heat up cooking oil and deep-fry rolls for about 5 minutes until golden brown then serve.
