ready-cooked ones will tend to separate from the bread during

Ingredients

prawns - 225g, uncooked, peeled

spring onions - 1 tsp, chopped

root ginger - 1/2 tsp, chopped

egg white - 1, lightly beaten

white bread - 6 slices

lard - 25g
-
white sesame seeds - 115-150g
-
corn flour paste - 1 tbsp

Chinese rice wine - 1 tbsp

salt and black pepper

vegetable oil

Method

Chop together the prawns with the
lard to form a paste.

Mix the prawn paste with all the
other ingredients except bread and sesame seeds.

Spread the sesame seeds evenly on
a tray.

Spread the prawn paste thickly on
one side of each slice of bread, press, spread side down, on the
seeds.

Heat the oil until medium hot, fry
2-3 slices of sesame bread at a time, spread side down for 2-3
minutes.

Remove and drain. Cut it into six
or eight fingers. Serves 4.
