Mix-Rice With Dried Seafood Recipes

 

      Ingredients

  • Dried scallops (wash and diced small) - 30 grams

  • Chinese mushrooms (soaked and diced) - 30 grams

  • Dried prawns (washed and drained)- 30 grams

  • Small onions (chopped) -3 pieces

  • Garlic (chopped finely) - 3 cloves

  • Red chili (shredded) - 2 pieces

  • Coriander leaves (chopped) - few pieces

  • Rice (washed and drained) - 400 grams

  • Water - 500 ml

  • Chicken stock - ½ cup

  • Oyster sauce - 3 tablespoons

  • Soy sauce - 1 tablespoon

  • Sesame oil - ½ teaspoon

  • sugar and salt to taste

      Methods

  • Heat 2 tablespoons of cooking oil in pan and add dried prawns and chopped onions in, stir-fry until fragrant.

  • Toss in mushrooms and scallops in and continue to fry for another minute until all ingredients become aromatic.

  • Add washed rice , chicken stock, oyster sauce, soy sauce, sesame oil, salt and sugar in , mix well and turn off fire.

  • Transfer rice mixture into rice cooker and cook rice as normal. When rice is cooked, let it settle for about 10 minutes. Garnish with chopped coriander and shredded chili and serve hot.
