This method of Chinese stir-fry
prawns retain the freshness of the prawns. Prawns are cooked in very
short time, so need to be careful not to over cooked and spoil the
texture.
Ingredients
- Prawns (big size and
unshelled) - 1 kilograms
- Ginger - 10 slices
- Spring onions (cut into 2
inches length)- 5 stalks
- Garlic (crushed) - 3 cloves
- Oyster sauce - 1 tablespoon
- Cooking wine- 1 tablespoon
- Red chili (shredded) - 2
pieces
- Cooking oil - 4 tablespoons
- Sugar - 1 teaspoon
- Cornstarch -½ teaspoon
- Water - 3 tablespoons
- Salt to taste
Method
- Trim and rinse prawns properly with clean
water and drained.
- Heat cooking oil then add
ginger, spring onions, garlic, chili and stir-fry until
fragrant.
- Add prawns, oyster sauce,
cooking wine, sugar and continue stir-fry for another 2 minute.
- Pour the mixture of cornstarch
and water and simmer for a while until sauce thickens.
- Serve while hot
