Chinese Stir-Fried Prawns Recipe

This method of Chinese stir-fry prawns retain the freshness of the prawns. Prawns are cooked in very short time, so need to be careful not to over cooked and spoil the texture.

Ingredients

  • Prawns (big size and unshelled) - 1 kilograms
  • Ginger - 10 slices
  • Spring onions (cut into 2 inches length)- 5 stalks
  • Garlic (crushed) - 3 cloves
  • Oyster sauce - 1 tablespoon
  • Cooking wine- 1 tablespoon
  • Red chili (shredded) - 2 pieces
  • Cooking oil - 4 tablespoons
  • Sugar - 1 teaspoon
  • Cornstarch -½ teaspoon
  • Water - 3 tablespoons
  • Salt to taste

Method

  • Trim and rinse prawns properly with clean water and drained.
  • Heat cooking oil then add ginger, spring onions, garlic, chili and stir-fry until fragrant.
  • Add prawns, oyster sauce, cooking wine, sugar and continue stir-fry for another 2 minute.
  • Pour the mixture of cornstarch and water and simmer for a while until sauce thickens.
  • Serve while hot
