Ingredients
- Yellow croaker (about
500grams) - 1 whole fish
- Tomato sauce - 2 tablespoons
- Chili sauce - 1 tablespoon
- Onion (sliced) - 1 piece
- Sugar -2 tablespoon
- Vinegar - 1 tablespoon
- Cornstarch - 2 tablespoons
- Cornstarch solution - 1
tablespoon
- Water - 6 tablespoons
- Garlic (chopped) - 4 cloves
- Ginger (shredded) - 1
tablespoon
- Black soy sauce - 2
tablespoons
- Cooking oil - 4 tablespoons
- Salt to taste
Method
- Clean fish and remove scales,
grills and entrails.
- Remove the fish head and
fillet the meat, discarding the bones. Also cut the fish head
into two, lengthways.
- Season fish with salt for 10
minutes, Coat the fish with cornstarch then deep-fry both sides
of the fish and set aside.
1 side with sweet and sour taste
- Heat 2 tablespoons of cooking
oil, stir-fry sliced onions to fragrant then add 4 tablespoons
of water, tomato sauce, chili sauce, vinegar, sugar and
bring to boil. Add salt to taste and add cornstarch solution to
thicken the gravy. Pour over 1 side of fish and serve.
1 side with black soy sauce
- Heat 2 tablespoons of cooking
oil , stir-fry garlic and ginger to fragrant then add 2
tablespoons of water and black soy sauce. Put the other half of
the fish in and coat both sides with sauce and serve.
Croaker may be substituted by other
similar varieties of fish.
