Chicken In Chinese Wine Recipe

Ingredients

  • Chicken - 1.5 kilograms (3 lbs)
  • Chinese wine - ½ cup
  • Brandy - ½ cup
  • lettuce leaf - 1 piece
  • Chinese parsley - 1 stalk
  • ginger - 2 slices
  • Garlic - 1 clove
  • Salt to taste

Method

  • Boil water with ginger and garlic in a pot deep enough to cover whole chicken. Turn to low heat and dip chicken into boiled water for 20 minutes and dip into cold water for 3 minutes. Dip chicken back into hot water for another 20 minutes and dip into cold water for 2 minutes again then set aside to leave it cool.
  • Cut the chicken into bite size and arrange in a large bowl. Pour the Chinese wine and brandy over the chicken and let it soak for 2 hours.
  • To serve, arrange the chicken on a plate,  pour the wine into a pot and bring to boil.
  • Spread the wine over the chicken and garnish dish with lettuce leaf and Chinese parsley.
