Chinese Ox-Tail Soup

Ingredients

  • Ox tail - 600 grams
  • Black eyed beans (mei dou) - 50 grams
  • Barley - 40 grams
  • Carrot - 1 piece
  • Tomatoes - 3 pieces
  • Potatoes - 2 pieces
  • Onion - 1 piece

Method

  • Clean ox-tail  and chop into pieces. Scald in boiling water for 3 minutes, drain and rinse with clean water.
  • Peel and cut carrot and potatoes into large pieces. Cut tomatoes into half and quarter onions.
  • Boil sufficient water and add in all ingredients and cook with low heat for 3 hours.
  • Season with pepper and salt.
