Ingredients for chicken
- 1 whole chicken, about 1.5 kgs
- fresh ginger (5 slices)
- garlic (2 cloves)
- 4 spring onions (trim)
- salt (1 teaspoon)
- sesame oil (1 tea spoon)
- cucumber (slice)
- cilantro springs (garnish)
- water (measure to cover chicken)
Methods for cooking chicken
- bring water to boil
- stuff ginger, garlic, spring onion into chicken
- dip chicken carefully into boiled water
- turn to low heat and simmer for 15 minutes
- lift chicken out carefully and dip into ice water for 1 minute
- dip chicken back into boiled water for another 20 minutes to
simmer
- dip chicken into ice water again for 5 minutes
- apply sesame oil on chicken and leave it for 1/2 an hour
- chop into bite size and ready to serve
Ingredients for Chicken Rice
- long grain rice ( 2 cups)
- fresh ginger (3 slices)
- 3tablespoon butter
- 5 small onions( peeled and minced)
- reserved stock from cooking chicken (3-1/2 cups)
- salt (1/2 tea spoon)
Method to cook chicken rice
- heat up butter and stir-fry ginger, small onions until
fragrant
- add rice and mix well for 3 minutes
- transfer rice to rice cooker and add reserved chicken stock
- serve rice and chicken with chili sauce
