Ingredients

chicken fillet - 350g

egg noodles - 175g

garlic - 2 cloves, crushed

red and green pepper - one for each,
seeded and chopped
-
bean sprouts - 175g
-
spring onion - 8, sliced
-
sunflower oil - 2 tbsp
-
Chinese rice wine - 3 tbsp
-
dark soy sauce - 2 tbsp
-
sesame oil - 1 tbsp
-
fresh flat-leaf parsley - 3 tbsp
-
toasted sesame seeds - 1 tbsp

Method

Soak the noodles according to the
packet instructions. Drain well.

Slice the chicken fillet.

Heat the sunflower oil in a
preheated frying pan and cook the chicken over high heat until
golden brown and cooked through.

Add in sesame oil, spring onions,
peppers, and garlic. Cook over high heat for 3-4 minutes until
the vegetables beginning to soften.

Reduce heat slightly and stir in
noodles, rice wine, and soy sauce.

Stir-fry for 2 minutes, add in
bean sprouts and cook for further 1-2 minutes. Add a splash of
chicken stock if the noodles begin to stick.

Stir in parsley and serve
sprinkled with sesame seeds. Serves 4.
