Bitter Gourd With Soy Bean Paste Recipe

Ingredients

  • 1 piece Bitter gourd (Cut into thin slice)
  • 100 gram chicken breast (cut into 1/2 inch cube)
  • fresh ginger (5 slices)
  • 1 clove garlic (mince)
  • 1 table spoon soy bean paste
  • red carrot (20 thin slices)
  • 1 tea spoon sugar
  • 2 table spoon cooking oil
  • 200 ml water
  • 2 tablespoons of cornstarch solution

Method

  • Scald the sliced bitter gourd in boiling water for 5 minutes to remove the bitterness and soften the fruit then set aside.
  • heat cooking oil in a wok and sauté ginger and garlic for a while then add soybean paste and sugar in and stir-fry until fragrant.
  • add all other ingredients in and toss well.
  • add water and simmer until bitter gourd and chicken thoroughly cooked.
  • add seasoning to taste and stir in cornstarch solution to thicken and shine the gravy.
