Ingredients

beef - 350g

fresh ginger - 1 in, cut into
strips

broccoli - 350g. cut into small
florets
-
garlic - 1 clove
-
spring onion - 4, sliced diagonally
-
carrot - 1, cut into matchstick strips
-
Chinese rice wine - 2 tbsp
-
cornstarch - 1 tbsp
-
brown sugar - 2 tsp
-
sesame oil - 1 tsp
-
beef stock - 1/2 cup
-
soy sauce - 2 tbsp
-
spring onion - to garnish

noodles or rice - to serve

Method

Trim the beef and cut into thin
strips, and toss in the cornstarch to coat thoroughly.

Heat sesame oil in a frying pan,
add the beef strips and stir fry over a brisk heat for 3
minutes. Remove and set aside.

Add the spring onions, ginger,
broccoli, garlic, carrot, and stock to the frying pan.

Cover and simmer for 3 minutes,
then uncover and cook, stirring, until all the stock has reduced
entirely.

Mix the brown sugar, soy sauce and
rice wine and add into the pan with the beef. Cook 2-3 minutes
and stirring continuously.

Spoon into serving dish, garnish
with spring onion. Serve on a bed of noodles or rice.
