Chinese Onion Soup Recipe

This soup is good for children and senior people who can swallow everything in the soup without much biting and chewing.

Ingredients

  • Onions (diced) - 200 grams
  • Potato (diced) - 200 grams
  • Carrot (diced) - 200 grams
  • Tomato - (diced) -100 grams
  • Water - 2 liters

Chicken stock

  • Chicken breast - 200 grams
  • Ginger - 2 slices
  • Dried fish or dried scallop - 20 grams

Method

  • To prepare the chicken stock, boil 2 liters of water then add all the chicken stock ingredients into boiling water for 3 minutes. Turn to very low heat and cook for 1½ hours. Transfer only the soup liquid  into another soup pot without the remains of the ingredients
  • Heat up the soup again , add in onions, tomato, carrot and potato, bring to boil for 5 minutes then turn to low heat.
  • Continue to cook with low heat for 1 hour until all ingredients in the soup become soft.
  • Add salt to taste and white pepper when serve.
