Oriental Seafood Platter

Ingredients
3 pieces fish Japanese cake, 2 pieces sushi, 2 pieces mussel, 1 crab stick, salad sauce, wasabi, lemon wedges

Method

  • Slice the Japanese fish cakes into ½ an inch in thickness. Scald mussel in boing water of a while and then arrange all ingredients on a serving plate.
  • Spread salad sauce and lemon juice over the dish then keep it in chiller.
  • Serve cold with wasabi.

Stir-fried Pork with Ginger and Spring Onions

This is a  quick and easy dish to cook if you have all the ingredients prepared before hand. Even the preparation of ingredients won’t take you too much trouble because I am using all very basic stuff for this delicious dish. You can use beef instead of pork if you like because the marinades and cooking method is very similar.

Ingredients

300 grams pork (tenderloin, sliced), 2 cloves garlic (crushed), 20 thin slices of young ginger,  2 stalks of spring onions (sectioned), 1 cup of water

Marinades

1 teaspoon light soy sauce, 1 teaspoon oyster sauce, ½ teaspoon sesame oil, pinch of salt and a dash of white pepper powder, 1 teaspoon of Chinese cooking wine (shaoxing wine or Huadiao), 1 teaspoon of cornstarch, 2 tablespoons of water

Seasoning

1 teaspoon of oyster sauce, 1 teaspoon of soy sauce, 1 tablespoon of Chinese cooking wine, 1 teaspoon of fermented bean paste (dou jiang), sugar, salt and white pepper powder to taste, cornstarch solution (1 tablespoon of cornstarch to 3 tablespoons of water)

Method

  • Marinate pork for 30 minutes.
  • Heat 4 tablespoons of cooking oil in a hot wok then stir in the marinated pork for a quick fried. Stir-fry for about 1 minute and not to over cook the sliced pork. Drain oil back to the wok and set aside pork.
  • Add 1 tablespoon of cooking oil into the wok, stir in the garlic, ginger and spring onions, saute to fragrant then add fermented bean paste and stir-fry to bring out the aroma.
  • Add 1 cup of water into the dish and bring to a gentle boil, add pork and let it simmer for 2 minutes then add in the seasoning. Drizzle cooking wine last to keep the aroma.
  • Add cornstarch solution to thicken and shine the gravy. Stir to mix well and dish up.
  • Best serve with rice.

Nyonya Recipe – Sambal Kacang Botol

Ingredients
150 g four angled beans (kacang botol)- sliced
1 sliced chili
20 g sliced carrot
1 tsp dried prawns
2 tbsp chili paste
5 g toasted belacan
1 tsp sugar
½ tsp chicken stock powder
4 tbsp cooking oil
Method

Heat oil in wok and fragrant chili paste, dried prawns and toasted belacan. Add in all other ingredients and stir fry for 3 minutes until dish is aromatic. Serve hot with rice.

Healthy Recipe – Cauliflower Salad

Ingredients
450 g cauliflower
2 eggs
1 tbsp chopped carrot
Salad dressing
1 tbsp salad oil
2 cloves garlic
2 tbsp vinegar
pinch of pepper and salt
Method
Hard-boil eggs , remove shell and dice egg white and egg yolk separately. Trim and rinse cauliflower, blanch in boil water with little bit of oil and salt for 3 minutes. Drain cauliflower well and place it in a big bowl. Spread diced egg and chopped carrot into the bowl and add salad dressing. Shake to mix well and serve.

Stuffed Mushrooms

Ingredients
8 fresh mushrooms
1 can of tuna fish
1 tbsp chopped onion
2 tsp of cornstarch
Marinade
2 tsp ginger juice
3 tsp wine
sugar and salt to taste
Method
Drain liquid from canned tuna, mix well with chopped onion and set aside. Trim and rinse fresh mushrooms, marinate mushroom for 10 minutes. Coat a thin layer of cornstarch onto the mushrooms, scoop 2 tbsp of tuna mix and stuff into the mushrooms. Boil 1 pot of water and steamstuffed mushrooms for 10 minutes. Dish up and serve hot.

Chinese Dessert – Sweet Red Bean Soup

Ingredients
2 cups of red bean
1 small piece of dried Chinese orange peel
400 g rock sugar
200 g lotus seeds (soak for 10 minutes and remove the green bitter shoot)
6 cups of water
Method
Wash red beans and place in a deep sauce pan. Add lotus seeds, orange peel and 6 cups of water. Bring to a boil and continue to simmer for 30 minutes until red beans are half cooked. Add rock sugar and continue to simmer for another 15 minutes until red beans are well cooked and soften. Serve hot.
