Ingredients

Gingko nuts (peeled) - 50 grams

Red dates (seed removed) - 15 pieces

Dried longan (soaked)- 50 grams

White fungus (soaked to soften) - 20
grams

Pak Hup (soaked for 30 mins) - 50
grams

Dried lotus seeds (soaked for 30 mins)
- 50 grams

Pandan leaves (knotted) - 4 pieces

Rock sugar - 200 grams

Water - 2 liters

Method

Bring 2 liters of water to boil
then add rock sugar and pandan leaves, turn to low heat and
simmer until sugar melted.

Add gingko, red dates, dried
longan and continue to simmer for 20 minutes. Remove from heat
and set aside.

Boil some water in another pot
then add pak hup, white fungus, lotus seeds and continue to boil
for another 10 minutes until ingredients become soft. Drain and
transfer to soup to mix.

This soup can be served hot or
chilled.
