Sweet Herbal Soup Recipe

 

     Ingredients

  • Gingko nuts (peeled) - 50 grams

  • Red dates (seed removed) - 15 pieces

  • Dried longan (soaked)- 50 grams

  • White fungus (soaked to soften) - 20 grams

  • Pak Hup (soaked for 30 mins) - 50 grams

  • Dried lotus seeds (soaked for 30 mins) - 50 grams

  • Pandan leaves (knotted) - 4 pieces

  • Rock sugar - 200 grams

  • Water - 2 liters

 

Method

  • Bring 2 liters of water to boil then add rock sugar and pandan leaves, turn to low heat and simmer until sugar melted.

  • Add gingko, red dates, dried longan and continue to simmer for 20 minutes. Remove from heat and set aside.

  • Boil some water in another pot then add pak hup, white fungus, lotus seeds and continue to boil for another 10 minutes until ingredients become soft. Drain and transfer to soup to mix.

  • This soup can be served hot or chilled.
