Pumpkin Cake Recipe

    Ingredients

  • Pumpkin (peeled and sliced) - 500 grams

  • Rice flour - 500 grams

  • Brown sugar - 1 tablespoon

  • Chicken stock powder - 1 teaspoon

  • Cooking oil - 2 tablespoons

  • Onion (chopped finely) - 1 large

  • Water - 1 liter

  • Salt - 1 teaspoon

 

Garnishing Ingredients

  • Dried prawns (ground coarsely and pan-fried) - 80 grams

  • Shallots (chopped and fried) - 3 tablespoons

  • Chili and spring onions (chopped finely) - ½ cup

Method

  • Steam sliced pumpkin with high heat for 10 minute until soft then set aside.

  • Add rice flour, brown sugar, water and chicken stock powder in a big bowl and mix well.

  • Heat up 2 tablespoons of oil in pan and stir-fry to fragrant, add rice flour mixture and stir to mix well.

  • Add pumpkin in and continue to stir until all ingredients are well mixed.

  • Grease a steaming tray with some oil and steam it for 3 minutes. Pour in the pumpkin mixture and level the top portion then steam it for 40 minutes.

  • Sprinkle garnishing ingredients on top of the pumpkin cake and slice into small pieces to serve.
